I wish I understood why blood oranges are so much better than other oranges. Whatever the reason, the superiority carries over to sorbet. The pressing question is what kind of sorbet to combine with blood orange. The gentleman at the counter suggested chocolate, which turned out pretty well but overwhelmed the crispness of the blood orange. His second suggestion was passion fruit which seemed improbable.
